Overview

Here at GILT, we put our tea selection together in the same way that a sommelier would structure a wine list – with an emphasis on variety and quality. We currently feature 38 selections from five different purveyors with an ever-changing and evolving selection of rare teas. We also have a small selection of unusual teas that do not appear on the menu due to their limited supply and every season brings new and exciting changes as the harvests are brought in.

Throughout history, cultures have embraced tea as a means of relaxation, artistic expression and exploration of the fragile connection between humankind and nature; indeed, tea is an expression of life. At Gilt, we continue to offer the finest selection of whole leaf teas from purveyors around the world.

What is Tea

To begin with, tea is the product of a leaf from a single plant, the camellia sinensis. A member of the evergreen family, the plant itself can take many forms ranging from a shrub in China, a bush with a small trunk that can grow up to 20 feet high in India, to an actual tree capable of reaching heights of up to 60 feet in Southeast Asia. The one thing they all have in common is that the leaves produce the wonderful beverage known as tea. Different production methods as well as differences in soil and climate from region to region account for the differing types of tea from white to yellow to green to black, red, oolong and beyond. The variety is practically limitless.

Like wine, with which it shares so many similarities, tea is an ever changing and dynamic product. The quality of the soil, the reputation of the farmer and/or producer, the different levels of quality and of production methods from region to region and country to country all play a considerable role in our selection.

Selections from our tea menu are available in GILT bar every evening after 5:00 pm, and during regular dinner service in our Dining Room:

Tuesday - Thursday
5:30 pm - 10:00 pm

Friday - Saturday
5:30 pm - 10:30 pm

The Dining Room is closed on Sunday and Monday.
