Mississippi Style Corn Fritters

Mississippi Style Corn Fritters

Yields: 2 quarts

Ingredients:
  • 4c of oil for frying
  • 1c All Purpose Flour
  • 2c Corn Meal
  • 1Tbl Baking Powder
  • 1Tbl Baking Soda
  • 2Tbl Salt
  • 2tsp Sugar
  • 2Tbl Paprika
  • 1Tbl Cayenne
  • 1Tbl Mustard Powder
  • 2 Jalapeno diced
  • 1 Red Bell Pepper Diced
  • 1 ½ c fresh corn kernels
  • 1Tbl Thyme minced
  • 1 bunch Scallions sliced thin
  • 3 Shallots Chopped
  • ½ c melted butter
  • 4 Eggs
  • 2 Egg Yolks
  • 1 ½ cup of Milk

Procedure:

Heat oil in a heavy bottom pot or deep fryer to 350 degrees Fahrenheit. Sift the next 9 ingredients together. Continue by whisking together the eggs, yolks, butter and milk. Fold the wet mixture into your dry sifted ingredients. Now add the herbs and diced vegetables and stir to combine evenly. Drop fritter batter by spoonfuls into the hot oil and fry until golden brown. Drain on paper towels.
